Abstract

Studying of stabilizer sodium metabisulphite influence on glucose destruction processes in the infusion solution with malate-ions has been conducted.

Sodium metabisulphite decreases content of the 5-HMF and its precursors deoxglucosones in the investigated solution, as well as it inhibits glucose oxidation with hydrocarbonaceous chain release. The best quality indexes have been obtained in solutions with stabilizer and initial pH 5.13—6.0 sterilized at 110 °C during 30 minutes.
